Seafood Fried Rice

Ingredients:

  • 250g Fresh Prawns, Okporo, or Shrimps
  • 1 Seasoning cube
  • 1 tsp Curry powder
  • 500g Basmati rice (TRS brand recommended)
  • 1 small bunch Spring Onions, chopped
  • 2 medium-sized Carrots, finely diced
  • 1 large Green bell pepper, diced
  • 2 tbsp Butter and 1 tbsp Vegetable oil
  • 1 Red Onion, diced
  • 1 tbsp Salt

Instructions:

Step 1:

  1. Wash the fresh Prawns with water and remove the heads. Place them in a small pot.
  2. Season with 1 stock cube, Salt, Curry powder, and thyme.
  3. Add 1 cup of water and steam for about 10 mins.
  4. Scoop the steamed prawns into a dish and set the prawn broth aside for later use.

Step 2:

  1. Heat oil in a medium-sized pot until hot.
  2. Add washed Basmati rice and toss to incorporate the oil.
  3. Add water (enough to cover the rice), prawn broth, and salt to taste.
  4. Boil for about 30 minutes until the rice softens and the water dries out.

Step 3:

  1. In a small frying pan, heat 2 tbsp Butter until hot.
  2. Add thinly diced carrot, green pepper, Spring onion, and red onion. Stir-fry for about 2 mins.
  3. Add some cooked prawns and stir-fry for an additional 2 mins.
  4. Scoop out some Basmati rice into the fried veggies in the pan and stir-fry for 1 min to incorporate the mixture.
  5. Turn it out onto a serving dish and repeat for the rest of the batch until all the rice is used up.

Serve alone or with Tomato Stew or Chicken Sauce. Enjoy!
