Ingredients:
- 250g Fresh Prawns, Okporo, or Shrimps
- 1 Seasoning cube
- 1 tsp Curry powder
- 500g Basmati rice (TRS brand recommended)
- 1 small bunch Spring Onions, chopped
- 2 medium-sized Carrots, finely diced
- 1 large Green bell pepper, diced
- 2 tbsp Butter and 1 tbsp Vegetable oil
- 1 Red Onion, diced
- 1 tbsp Salt
Instructions:
Step 1:
- Wash the fresh Prawns with water and remove the heads. Place them in a small pot.
- Season with 1 stock cube, Salt, Curry powder, and thyme.
- Add 1 cup of water and steam for about 10 mins.
- Scoop the steamed prawns into a dish and set the prawn broth aside for later use.
Step 2:
- Heat oil in a medium-sized pot until hot.
- Add washed Basmati rice and toss to incorporate the oil.
- Add water (enough to cover the rice), prawn broth, and salt to taste.
- Boil for about 30 minutes until the rice softens and the water dries out.
Step 3:
- In a small frying pan, heat 2 tbsp Butter until hot.
- Add thinly diced carrot, green pepper, Spring onion, and red onion. Stir-fry for about 2 mins.
- Add some cooked prawns and stir-fry for an additional 2 mins.
- Scoop out some Basmati rice into the fried veggies in the pan and stir-fry for 1 min to incorporate the mixture.
- Turn it out onto a serving dish and repeat for the rest of the batch until all the rice is used up.
Serve alone or with Tomato Stew or Chicken Sauce. Enjoy!
