Grilled Chicken

Ingredients: For Chicken:

  • 3½-4 lbs chicken wings
  • 1 tsp black pepper
  • 2 tsp baking powder

For Sauce:

  • ½ cup honey
  • 3 tbsp suya seasoning/yaji
  • 2 medium-sized garlic cloves (minced)
  • ½ inch grated ginger
  • A healthy pinch of onion powder
  • 1 tsp smoked paprika
  • ½-1 tbsp tomato paste
  • 1 tbsp butter
  • 1 tbsp cooking oil
  • Salt or bouillon to taste

Instructions:

For Chicken:

  1. Preheat the oven to 375 degrees.
  2. Wash chicken, pat dry (completely dry), and split. Season with salt, pepper, and baking soda. Let it rest for 10 minutes to an hour. Place in the oven and bake until crisp and the juices run clear.

For Sauce:

  1. Heat butter until melted, add oil. Add garlic and cook until fragrant. Add paprika and 2 tbsp suya seasoning. Mix to form a paste; then add honey. Stir to blend; then add tomato paste if using. Reduce heat and bring the sauce to a boil, stirring occasionally.
  2. Once the sauce thickens, season with salt or bouillon to taste. Toss in the chicken and the remaining suya seasoning. Cook for another 2 minutes; then serve. Enjoy the deliciousness!
