Fish Pepper soup

Ingredients:

  • 2 whole fish (cleaned and gutted)
  • 3 tablespoons pepper soup spice
  • 1 small red bell pepper (seeded)
  • 2 habaneros
  • ½ onion
  • 1 tsp Utazi (optional)
  • 1 handful basil (optional)
  • 1 Aridan fruit or Uyayak pod (thoroughly washed, very optional)
  • 3-4 cups water
  • 1 bouillon (optional)
  • Salt to taste

Instructions:

  1. Wash and pat fish dry. Make slits into the fish with a knife to allow seasonings to penetrate. Season with salt and set aside.
  2. Blend peppers and onions roughly to a smooth consistency. Pour into a wide saucepan. Add Aridan fruit if using and 3-4 cups of water. Season with bouillon and bring to a boil. Add the fish and check for seasonings.
  3. Bring the pot to a slight boil, then reduce heat and cover to cook for 15 minutes. Occasionally ladle the soup over the fish without stirring. This allows the juices to infuse into the fish. After 15 minutes, add Utazi and basil. Turn off the heat and savor the goodness.
