Dambu Nama (Dried Beef Floss)

Ingredients

  • Lean beef, trimmed of fat
  • Sliced red bell peppers
  • Sliced tomatoes
  • Onion
  • Suya Spice (a blend of uda, ehuru (calabash nutmeg), garlic, ginger, bouillon, and peanuts)
  • Bouillon (optional)
  • Salt to taste
  • Coconut or peanut oil

Instructions:

1. Season the beef with all the ingredients except suya powder and oil. Cook the meat in its own juices until almost dry. Then, add water, check for seasonings, and cook until soft with the water evaporated. Shred using a mortar and pestle, fork, or a food processor. Add suya spice, Cameroon or chili pepper, ginger powder (as needed), and bouillon if necessary.

2. Heat 1-2 teaspoons of oil in a pan and fry the shredded meat. Alternatively, for a healthier option, bake in the oven at 350 degrees instead of frying.
